Make Mom Breakfast in Bed for Mother's Day!

Recipe for Savory Dutch Baby from Weeknight Society

Savory Dutch Baby
With bacon fennel salad
Serves 4

6 eggs
1 ½ cups milk
1 ½ cups flour
1 tsp black pepper
1 tbs fresh chives
6 tbs butter
salt & pepper
6 strips bacon
2 cups arugula
1 small bulb fennel, thinly sliced
2 oz goat cheese, crumbled
1 tbs Dijon mustard
¼ cup olive oil
2 tbs red wine vinegar

STEP 1
Preheat oven to 425 degrees. Place butter in a 12" skillet and put it in the oven until the butter is melted. In a separate pan, begin cooking the bacon over low heat. (5 mins)

STEP 2
In a blender, beat eggs for 1 minute. Slowly add milk while blender is running to combine. Then add flour and pepper then let the blender run one more minute (5 mins). Chop chives into batter and stir gently. (5 mins)

STEP 3
Pour batter from blender into the hot skillet and return pan to the oven. Bake 25 mins until puffy and browned on the edges. (25 min)

STEP 4
Toss thinly sliced fennel, arugula, goat cheese in a bowl. Combine mustard, olive oil, and red wine vinegar and dress the salad. (5 mins)

STEP 5
Remove dutch baby from oven and top with salad and crumble bacon on top. Serve while still warm.
